酿酒设备蒸馏前需要注意哪些事项?

(一)设备清洗
(1) Equipment cleaning
新设备使用前,应进行清洗,否则刚开始几锅酒会有苦味及邪杂味。清洗部位包括:蒸煮锅内侧、酒度可调锅盖内侧及内胆导气管内侧、冷却器内胆。

用耐热砖(如土烧砖,不能用水泥砖),泥沙砌一个外方内圆的灶。灶的内径比设备蒸煮锅小5厘米左右,灶堂高度视燃料而定,以易燃烧、蒸煮锅内受热快、受热面大、受热均匀为原则,否则会延长蒸馏时间,灶内应有两层,以炉条间隔上层投放燃料,下层通风,漏渣。煤为燃料,要配备小型鼓风机。
